Breeding
Fermentation and élevage in oak barrel on fine lees for 12 months. Indigenous (natural) yeasts.
On the eye
Pale golden yellow with subtle luminosity.
On the nose
Complex bouquet of white stone fruits and delicate floral notes, with a mineral undertone characteristic of limestone-influenced terroir.
In the mouth
Silken texture with notes of exotic fruit and citrus. Well-defined acidity provides freshness, whilst the wine shows impressive length and aromatic persistence on the finish.
Pairs thoughtfully with poached white fish in cream sauce, tender veal preparations, poultry dishes, and shellfish. Also complements aged goat's cheese and soft cheeses such as Camembert. Serve at 10-12°C to appreciate its full aromatic expression.
