Breeding
Racking and blending in stainless steel tank, six months' élevage before clarifying filtration and bottling
On the eye
Deep garnet-red with intense reflections
On the nose
Powerful and layered, revealing ripe red fruits—redcurrant and blackcurrant—with subtle aromatic herb notes characteristic of Corsica, particularly myrtle. The bouquet develops with air.
In the mouth
Generous and well-structured with fine oak integration. A characteristic mineral note runs through the palate, providing definition and length. The tannins are refined and supportive.
M. Francois
This wine pairs admirably with lamb shoulder, particularly when prepared with candied citrus notes. The mineral character and aromatic profile complement game dishes and Mediterranean herb-based preparations. Decant thirty minutes before service to allow full expression of its complexity.
