Breeding
Ageing in stainless steel for approximately 10 months followed by maturation on lees for over 5 years and disgorging, imparting complexity and roundness to this premium rosé crémant

Bailly Lapierre is a cooperative winery founded in 1972 in Saint-Bris-le-Vineux (Yonne, Burgundy). Specialising in Crémant de Bourgogne. The cellars are housed in former underground limestone quarries (stone quarrying since the 12th century). Grapes: Pinot Noir, Chardonnay, Aligoté. Range: Brut, Rosé, Blanc de Blancs, Vive-la-Joie (prestige cuvée). Traditional method.
