In the mouth
Black cherry and wild blackberry lead, underpinned by soft spice and a mineral backbone. The finish is notably long and clean, with excellent balance between fruit and structure.
On the nose
Complex and layered: dark cherry and black plum liqueur mingle with quetsche and wild bay leaf. The aromatics develop with air, revealing further depth.
On the eye
Deep blood-red with hints of Falun red at the rim
Breeding
88% in demi-muids (600L) and 12% in terracotta amphora for 14 months
M. Francois
A natural pairing with traditional French charcuterie, particularly pâté en croûte. The wine's freshness and spice complement duck preparations beautifully, especially those with orange or rich sauces. The organic credentials add a dimension of thoughtfulness to the table.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
