Breeding
Grenache: 90% in demi-muids (600L) and 10% in terracotta amphora. Syrah: barrel ageing. For 14 months.
On the eye
Deep garnet with Bordeaux-like reflections. A wine of good colour intensity and clarity.
On the nose
Restrained and refined. Orange marmalade and preserved cherry emerge alongside gentle spice notes. The bouquet unfolds gradually, revealing layers without demanding attention.
In the mouth
Suave and unctuous on the palate with sustained aromatic persistence. The wine moves with grace, its tannins resolved and integrated. A wine of considerable refinement and balance.

This wine pairs beautifully with game preparations. Consider rabbit stewed in red wine, or a traditional civet of hare. The wine's structure and tannin profile complement the richness of these dishes without overwhelming them. Also suited to well-hung poultry and mature cheeses.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
