In the mouth

Dense, dark garnet robe with considerable depth of colour.

This wine pairs excellently with red meat dishes—beef and lamb in particular benefit from its structure and fruit weight. Consider it alongside a côte de boeuf or a slow-braised lamb shoulder. The wine's density and slightly rustic character make it equally suited to game and robust preparations. Serve at cellar temperature, ideally decanted fifteen minutes before service.

Le Clos des Fées is a wine estate in Vingrau (Pyrénées-Orientales), Roussillon. Founded in 1998 by Hervé Bizeul. Around 30 hectares on schist and limestone soils. Grapes: Grenache, Carignan, Syrah, Mourvèdre. Appellations: Côtes du Roussillon Villages. Cuvées: Le Clos des Fées, De Battre Mon Cœur s'est Arrêté, Vieilles Vignes. Wines of great intensity.
