In the mouth
Substantial and well-structured, with a mineral spine that carries the wine through to a persistent finish. The palate is neither lean nor overripe; the balance is exemplary. Acidity remains bright and supportive.
On the nose
White flowers predominate—honeysuckle and hawthorn—with a delicate toasted note imparted by careful élevage in oak. The aromatics remain restrained and refined, never dominating.
On the eye
Golden robe with subtle green-tinged reflections, suggesting freshness and vitality.
Breeding
Aged in 350-litre barrels (Burgundy's classic barrel size is 228 litres) for 21 months then 4 months in tank before bottling. 15% new oak.
This wine finds its natural home alongside seafood of distinction. Scallops—whether in a light cream sauce or simply seared—are particularly well-matched. The wine's mineral character and subtle oak complement the delicate sweetness of the shellfish without overwhelming it. Also excellent with white fish in butter sauces, or sole meunière.
