Breeding
Aged in stainless steel and concrete vats with partial barrel maturation in previously used oak to avoid excessive wood influence.
On the eye
Deep garnet-red with a lustrous appearance.
On the nose
Fresh dark berries dominate the bouquet, with subtle spice undertones that suggest the wine's mineral backbone and careful élevage.
In the mouth
A generous, approachable palate with ripe black fruit and soft tannins. The wine shows good structure without heaviness, finishing with a clean, mineral note characteristic of the appellation.
Cantus Vitis occupies an elegant middle ground between Cailhol Gautran's other expressions. It sings the terroir of Minervois with clarity and restraint—that hallmark limestone signature runs through it like a thread. Pair with tajine, grilled meats, and aged cheeses. A wine that rewards attention without demanding it.

DOMAINE CAILHOL GAUTRAN
Domaine Cailhol Gautran farms 55 hectares on the limestone plateau of the Haut Minervois, at Aigues-Vives in the Hérault, producing certified organic red, white and rosé wines under the Minervois appellation. The estate's story begins in 1918, when Martin Gautran took on his brother-in-law's vineyard after the latter fell in the Great War. Fourth-generation owners Olivia and Nicolas Gautran took the helm in 2006 and achieved organic certification from the 2020 vintage. At Halles Quercamps, we selected this estate for the rigour of its approach: clay-limestone soils worked with real care, a fine range of southern varieties, and wines that faithfully express the character of the Massif Central foothills. A Minervois of genuine conviction.
