Fresh, profound, and layered—the essence of Catalan terroir

  • Olivier Pithon's Lais expresses the distinctive character of Calce, a village in the Côtes Catalanes known for its mineral-rich soils and Mediterranean influence. This organic white captures the region's natural balance between sun-ripened fruit and cool-climate precision.
  • Produced from carefully selected parcels farmed biodynamically, this wine reflects Pithon's philosophy of minimal intervention and respect for the vineyard's natural rhythms. The result is a wine of genuine complexity and freshness that rewards patient tasting.
  • At 12.5% alcohol, Lais sits at that elegant intersection where power and restraint coexist. It is a wine for the table—versatile enough for aperitif, yet substantial enough to accompany a simple supper of local produce.

In the mouth
The palate is taut and refreshing, with good acidity that frames white stone fruit and a saline minerality. The finish is clean and persistent, leaving a pleasant dryness that invites another sip. A wine of restraint and clarity.
On the nose
Delicate citrus notes—lemon and grapefruit—mingle with white flowers and a subtle mineral edge. A hint of garrigue emerges as the wine opens, speaking to the wild herbs of the Catalan hillsides.
On the eye
Pale gold with greenish glints; clear and luminous.
Breeding
Ageing in half wooden vats and half barrels for 10 months.
M. Francois
Lais—named after a Jersey cow grazing in Catalan vineyards—may seem an odd choice for a wine name. Yet it captures something essential about Pithon's approach: a gentle eccentricity grounded in serious winemaking. This is a wine that refuses easy categorisation, much like its namesake. Honest, unpretentious, and thoroughly rewarding.
