In the mouth
A powerful, structured wine with fine-grained tannins. Flavours of dark plum, blackberry and vanilla develop across the palate. The finish is long and concentrated, with excellent definition and ageing potential.
On the nose
A dense, expressive bouquet of dark berries and black pepper, layered with subtle oak spice and mineral notes. The aromatics are intense and evolving, revealing further complexity with air.
On the eye
Deep, dark garnet with violet reflections. Visibly concentrated and well-defined.
Breeding
Unique ageing of 38 months in new oak barrels
M. Francois
This wine pairs admirably with game birds, venison and red meat dishes of substance. It complements aged hard cheeses and would serve well alongside a traditional beef daube or cassoulet. Decanting one hour before service is recommended to allow the wine to fully express itself.
