Breeding
Ageing in demi-muids for 24 to 30 months followed by bulk blending one month before bottling
On the eye
Deep ruby robe with garnet undertones
On the nose
Pronounced white pepper and fresh dark berry fruit, with distinctive violet aromatics. The bouquet displays the mineral precision characteristic of Côte-Rôtie's granite terroir.
In the mouth
A complex palate of dark woodland fruits—blackberry, elderberry, cassis—interwoven with floral notes of jasmin and violet. The wine shows good structure and definition, with tannins that suggest further development in bottle.
This wine pairs particularly well with roasted beef, where its pepper-tinged dark fruit and structured tannins complement the richness of the meat. Also consider game birds and mature cheeses. The wine would benefit from decanting thirty minutes before service to allow the aromatics to fully emerge.
