A Provence rosé of substance and refinement

  • Established in 1830 on the slopes near Aix-en-Provence, Chateau Simone commands north-facing vineyard sites with limestone scree soils that impart mineral character and longevity to its wines.
  • This rosé draws from a carefully balanced blend of regional varieties—Grenache and Mourvèdre predominate—yielding a wine of structure, aromatic complexity and elegance rather than the lighter style typical of Provence.
  • Unlike many Provençal rosés, Chateau Simone Palette ages gracefully in cellar and partners admirably with refined cuisine: Mediterranean dishes, white meats, spiced preparations and fine dining occasions.

Product features : Chateau Simone 2023 — Palette

Breeding
Aged in large oak vats and barrels for several months, imparting structure and complexity to the rosé whilst preserving the freshness of the fruit.
On the eye
Pale salmon hue with orange glints; bright and crystalline
On the nose
Complex and refined bouquet: small red fruits, citrus notes, delicate florals and a whisper of spice. Mineral undertones suggest the limestone terroir.
In the mouth
Rich and textured on the palate with pleasing roundness. Wild strawberry and redcurrant meld with grapefruit and floral notes, finishing long and persistent. Mineral freshness and saline character reflect the calcareous soils.
M. Francois
Chateau Simone Palette represents rosé of genuine substance—structured, complex and capable of cellaring. It eschews the light, fruit-forward style in favour of silken texture and aromatic depth. Ideal with grilled fish, poultry, Provençal fare and more elaborate table. A serious Provence rosé for the discerning drinker.
