In the mouth
The palate unfolds with roundness and elegance. Fine tannins provide structure without assertion, whilst the wine's natural acidity carries the flavour through to a refined, lingering finish.
On the nose
Subtle aromatics of preserved cherry and plum emerge gradually, with underlying mineral notes characteristic of the Loire's schist soils. The bouquet develops with air.
On the eye
Deep garnet robe with sustained colour; a wine of evident concentration and maturity.
Breeding
Ageing will last 12 to 16 months
M. Francois
This wine complements poultry and lighter meat preparations with particular grace. It pairs thoughtfully with scallops and seafood preparations, and shows affinity with aged cheeses of moderate intensity. Serve at 14–15°C to appreciate its subtlety.
