On the eye
Golden yellow robe, bright and crystalline, with excellent clarity and luminosity.
On the nose
Richly aromatic: quince paste dominates, supported by hawthorn blossom and verbena. The nose is complex and inviting, suggesting both ripeness and restraint.
In the mouth
Full-bodied and textured. The clay-rich terroir contributes mineral grip and density, whilst the Chenin's natural acidity maintains elegant balance and length.
Clos du Moulin represents the perfect bridge between L'Insolite's tension and Clos Romans' minerality. More accessible in youth than its celebrated neighbour, yet with remarkable completeness: vibrant, elegant, and of rare finesse. A gastronomic wine of distinction—equally at home with anchoïade, sea bream tartare, Thai prawn salad, or poached chicken.

Domaine des Roches Neuves is a wine estate in the Saumur-Champigny appellation (Loire Valley), run by Thierry Germain. Around 28 hectares farmed biodynamically. Main grapes: Cabernet Franc (reds) and Chenin Blanc (whites). Limestone tuffeau soils. Cuvées: Terres Chaudes, Marginale, Franc de Pied. Wines of great precision and fine depth.
