Breeding
Brief ageing in stainless steel on fine lees to preserve the wine's vibrancy and fruit brightness.
On the eye
Pale salmon-pink with brilliant clarity and pleasing intensity of colour.
On the nose
Wild raspberry and redcurrant dominate, with subtle notes of woodland strawberry and a whisper of white flowers beneath.
In the mouth
Intense yet refined, with delicate floral notes of garrigue flowers and herbs providing complexity. The palate remains fresh and well-balanced throughout.
Serve well-chilled as an apéritif or alongside grilled fish and lighter meat preparations. Its aromatic profile and acidity make it particularly suited to Asian and African cuisines, where it will complement spiced dishes with grace and restraint.

ABBAYE SYLVA PLANA
Based in Laurens, Hérault, Abbaye Sylva Plana farms 54 hectares under organic certification across schist, clay-limestone and grey marble soils, producing AOC Languedoc reds, whites and rosés. Founded in 1139 by Cistercian monks, the estate was taken over in 1998 by Henry-Ferdinand Bouchard and his son Nicolas, who completed organic certification in 2008. Yields are deliberately held to 35 hl/ha across south-facing, contour-planted vineyards, with varieties spanning Syrah, Grenache, Mourvèdre, Roussanne and Vermentino. At Halles Quercamps, we have selected this estate for the coherence of its viticultural project, the remarkable depth of its terroirs and the consistent rigour of its organic winemaking. A benchmark address in Languedoc-Roussillon.
