In the mouth
Black cherry and wild blackberry lead, supported by warm spice and liquorice notes. Excellent length and grip. Tannins are ripe yet structured, suggesting five to eight years' further development.
On the nose
Complex and layered: ripe dark cherry, black plum liqueur, quetsche and wild bay leaf. Secondary notes of garrigue emerge with air.
On the eye
Deep blood-red with Falun-red reflections
Breeding
88% in demi-muids (600L) and 12% in terracotta amphora for 14 months

A successful pairing emerges with traditional pâté en croûte or duck à l'orange. The wine's natural acidity cuts through richness whilst its fruit intensity complements game preparations. Equally rewarding with mature hard cheeses or herb-seasoned charcuterie.

LE CLOS DU CAILLOU

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
