Breeding
Grenache: 90% in demi-muids (600L) and 10% in terracotta amphora. Syrah: élevage in barrels. For 14 months.
On the eye
Deep garnet with Bordeaux-like reflections
On the nose
Restrained and refined. Orange marmalade and preserved cherry emerge alongside gentle spice notes, revealing the wine's aromatic subtlety.
In the mouth
Suave and unctuous on the palate with admirable aromatic persistence. The wine unfolds with quiet elegance, its texture refined and its finish lingering.
Pair with game birds and furred game. Particularly suited to rabbit in mustard sauce or hare civet, where the wine's silky structure and spiced notes complement the richness of the dish. Also excellent with well-seasoned poultry dishes.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
