Breeding
Approximately 11 to 12 months in oak barrels (with only a small proportion of new wood) to preserve the finesse of the terroir

Pale, luminous robe with green-tinged reflections, conveying freshness and clarity.
On the nose
Aromatic profile centred on citrus and white stone fruits—lemon, grapefruit, and white peach—with subtle mineral undertones that reflect the limestone terroir.
In the mouth
Saline and mineral on the palate, with assertive acidity that frames the wine's structure. The finish is clean and persistent, with lingering citrus notes.
A wine of considerable charm and precision. The mineral character pairs beautifully with cured meats, particularly jambon persillé. Its acidity and salinity also make it an excellent companion to oysters and other shellfish. Drink now through 2027.

Domaine Saumaize-Michelin is a wine estate in Vergisson, Pouilly-Fuissé appellation (Burgundy). Run by Roger and Christine Saumaize. Around 10 hectares of vines. Grape: Chardonnay. Appellations: Pouilly-Fuissé, Saint-Véran, Mâcon-Vergisson. Parcel-by-parcel vinification with oak-barrel ageing. Wines of great minerality and fine concentration.
