Breeding
On fine lees with regular stirring over a variable period depending on the vintage, averaging 10 to 14 months
On the eye
Golden yellow with subtle green glints, suggesting freshness and youth.
On the nose
Majestic and layered. Fresh herbaceous notes mingle with liquorice and anise, whilst honeyed warmth, citrus and brioche add complexity and depth. A wine of considerable aromatic presence.
In the mouth
Rich and engaging, moving between green citrus, vanilla and muscatel. The palate is finely structured, with a long, mineral finish that echoes the calcaire soil. Excellent equilibrium throughout.
Pair with Belon oysters, sautéed scallops, traditional andouillette with mustard seed, or delicate egg-based desserts such as œufs à la neige. Also excellent with freshwater fish preparations and lighter shellfish dishes.

DOMAINE ALPHONE MELLOT
Domaine Alphonse Mellot is a wine estate in the Sancerre appellation (Loire Valley). One of Sancerre's oldest winemaking families, spanning 19 generations. Around 50 hectares farmed biodynamically. Grapes: Sauvignon Blanc (whites) and Pinot Noir (reds). Cuvées: La Moussière, Génération XIX, Edmond. Flint (terre blanche) and limestone (caillottes) soils.
