Breeding
12 months in oak barrels, partly new wood.
On the eye
Deep, dark garnet. A wine of serious colour and weight.
On the nose
Red fruits—cherry and plum—supported by pronounced sous-bois notes. Vanilla and toasted oak provide structure and warmth without dominating the fruit.
In the mouth
Powerful and muscular on the palate, with substantial flesh and backbone. The tannins are firm and well-integrated. A woody note persists on the finish, speaking to careful élevage in oak.
The Cuvée des Vieux Ceps is the natural partner for cassoulet, duck confit, and game of all kinds. It stands equally well with Pyrenean sheep's cheese and Auvergne blue. This is a wine built for the table, not for admiration alone.
