In the mouth

DOMAINE VACHERON
Established on the hillside vineyards of Sancerre (Cher), Domaine Vacheron farms 51 hectares of Sauvignon Blanc and Pinot Noir across silex and calcareous caillottes soils, straddling the geological fault that defines the appellation. Founded around 1900 by Maurice Vacheron, the estate passed to Jean-Dominique and Jean-Laurent Vacheron in 2002, who completed a full conversion to biodynamics by 2006 — making it the first estate in the Sancerre AOC to achieve that certification. At Halles Quercamps, we selected this estate for the rigour of its parcel-by-parcel approach — six single-lieu-dit cuvées in the Burgundian tradition — and for the precision with which it articulates the diversity of Sancerre's terroirs.
