Breeding
Aged one year in topped-up barrel with regular lees stirring
On the eye
Pale lemon-yellow with crystalline highlights.
On the nose
Citrus zest and cedar lead, with herbaceous undertones that suggest the wine's mineral backbone. The aromatics are restrained and refined rather than showy.
In the mouth
Fresh and energetic on the palate, with a saline minerality that drives the finish. The structure is lean and precise, with good acidity providing definition throughout.
M. Francois
This is a wine of considerable food-friendliness. Pair with shellfish—oysters, scallops, langoustines—where its minerality and acidity will complement briny flavours. Also excellent with white fish preparations and lighter poultry dishes. The wine's freshness makes it equally suitable as an aperitif wine.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
