Breeding
12 to 15 months in barrel (approximately 40% new oak and 60% one or two-year-old casks). The use of French oak refines the Syrah's tannins whilst preserving the wine's fruit brightness.
On the eye
Brilliant pale gold in colour, with excellent clarity and luminosity.
On the nose
The bouquet reveals white flowers—acacia and hawthorn—alongside exotic fruit notes and a discreet spice character. The aromatics are clean and well-defined.
In the mouth
The palate is well-poised between freshness and roundness. Good tension and mineral salinity provide structure, whilst a gentle richness ensures balance. The finish is clean and persistent.
M. Francois
A versatile food wine. Pair with delicate fish such as sole, white meat preparations including poulet à la crème, or aged cheeses such as Saint-Nectaire. The wine's mineral character also complements truffle-based dishes. Serve well-chilled at 10-12°C.

CHATEAU PESQUIE

Château Pesquié is a wine estate in the Ventoux appellation, at the foot of Mont Ventoux (Vaucluse). Owned by the Chaudière-Bastide family. Around 95 hectares at 300-400 m altitude. Grapes: Grenache, Syrah, Cinsault, Roussanne, Viognier, Clairette. Organically farmed. The wines express the freshness brought by the altitude and the mistral of Ventoux.
