In the mouth
The palate reveals roasted almond and hazelnut notes, underpinned by fine acidity. With bottle age, the wine develops deeper tertiary aromas reminiscent of truffle, adding further sophistication and depth.
On the nose
The bouquet opens with fresh, mineral notes and a subtle toasted character. Hazelnut and almond emerge gradually, with hints of white stone fruit providing brightness and complexity.
On the eye
A luminous golden hue, suggesting maturity and concentration.
Breeding
12 months' élevage in barrels of various sizes, followed by 3 to 4 months in stainless steel tanks to stabilise the wines before bottling.
M. Francois
This Santenay pairs beautifully with hard cheeses—Comté and Beaufort are particularly rewarding choices. The wine's natural affinity with aged dairy products, combined with its mineral backbone, creates a harmonious and memorable pairing. A wine of genuine merit for the discerning table.
