In the mouth
A crisp, lively attack reveals grapefruit and lemon notes with a mineral edge. The wine maintains excellent definition throughout, finishing with pleasing persistence and clarity.
On the nose
Attractive citrus aromatics—grapefruit and lemon—mingle with white stone fruit notes, creating an inviting and fresh bouquet.
On the eye
Pale yellow with subtle green glints.
Breeding
Aged for three months on fine lees in stainless steel prior to bottling to provide balance to the wine.

This Burgundian Sauvignon pairs beautifully with smoked fish and shellfish platters, and holds its own alongside goat's cheese. Its freshness and mineral character make it equally rewarding as an aperitif, or as an accompaniment to lighter fish courses.

Bailly Lapierre is a cooperative winery founded in 1972 in Saint-Bris-le-Vineux (Yonne, Burgundy). Specialising in Crémant de Bourgogne. The cellars are housed in former underground limestone quarries (stone quarrying since the 12th century). Grapes: Pinot Noir, Chardonnay, Aligoté. Range: Brut, Rosé, Blanc de Blancs, Vive-la-Joie (prestige cuvée). Traditional method.
