Breeding
In large wooden vats (75%) and demi-muids (25%) for 14 months
On the eye
Deep amaranth red with purple reflections. Clear and bright.
On the nose
Aromas of red berries and black cherry, with subtle notes of orange zest and a whisper of salted butter. The bouquet develops slowly, revealing mineral undertones.
In the mouth
Smooth and fresh on the palate, with flavours of cocoa seed and preserved cherry. The wine maintains good acidity throughout, with a lingering finish of dark fruit and spice.
M. Francois
An ideal companion to roasted venison and game preparations. The wine's structure and acidity make it equally at home with herb-crusted lamb or mushroom-based dishes. Decant thirty minutes before service to allow the aromatics to fully emerge.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
