In the mouth
Silken texture with remarkable balance. Red fruit flavours sit atop a spiced framework of cinnamon bark, white pepper, and ginger. The finish is fresh and crisply defined, closing on those distinctive eucalyptus notes.
On the nose
Elegant and layered. Sichuan pepper and cinnamon dominate, interwoven with wild blackberry, mûre, and subtle verveine. The aromatics suggest both ripeness and restraint.
On the eye
Ruby-hued with amethyst glints. A wine of visual clarity and depth.
Breeding
50% in 25-year-old large wooden vats and demi-muids, 50% in concrete tanks for 14 months
A natural companion to slow-cooked lamb, particularly with aubergine and the Provençal vegetable medley. The wine's spiced warmth and herbal freshness complement rich, gently charred preparations. Equally rewarding with game birds or herb-crusted roasts.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
