Breeding
The wine is aged 6 to 8 months in old oak foudres.
On the eye
Purple-tinged ruby, with violet reflections.
On the nose
Initial floral notes of violet give way to deeper aromas of ripe red and dark berries, with subtle mineral undertones characteristic of the Pierreux vineyard.
In the mouth
Fine yet substantial on the palate. Pure, linear structure built upon powdery tannins, with an elegant balance of fleshy fruit and savoury character. The finish is long, fresh, and occasionally touched with chocolate notes.
M. Francois
Serve this cuvée with blanquette de veau, Spanish tapas, or Bresse chicken with dauphinoise potatoes. The wine's acidity and moderate weight make it equally suited to lighter lunch fare. Best enjoyed at 13–14°C, decanted briefly if cellared for more than three years.

DOMAINES CHERMETTE

Based at Saint-Vérand in the Rhône, Domaines Chermette farm 53 hectares of predominantly granite soils at the heart of the Beaujolais appellation. The estate traces its origins to the seventeenth century, when it was known as Domaine du Vissoux; Pierre-Marie Chermette took the reins in 1982, and in 2023 his son Jean-Etienne gave it its current name. Certified Terra Vitis, the range centres on Gamay grown on granite — producing reds of real character and definition — alongside whites from Chardonnay on clay-limestone parcels. At Halles Quercamps, we have selected this estate for the rigour of its agri-environmental approach and the precision with which each cuvée reflects its terroir. A benchmark address for those who take Beaujolais seriously.
