In the mouth
Impressive amplitude with a distinctive mineral length. The wine balances generous fruit expression with taut acidity, creating tension that sustains through the finish without sacrificing the wine's inherent richness.
On the nose
Expressively aromatic, opening with toasted bread and menthol, followed by fresh herbal notes. Yellow fruit and almond emerge as the wine develops, revealing the complexity built during élevage.
On the eye
Brilliant, with pale gold colouration and excellent clarity.
Breeding
Selection of free-run juice, vinification in oak barrels (40% new), extended fermentations. Several additional months in barrel on fine lees, then in concrete vats, remaining on fine lees

This Chardonnay pairs beautifully with game dishes of substance—consider it alongside jugged hare with fennel cream and hazelnut fragments. The wine's mineral backbone and fruit complexity complement rich, nuanced sauces whilst its acidity cleanses the palate between courses.

Domaine Guffens-Heynen is a wine estate in Vergisson, Mâconnais (Burgundy). Founded by Jean-Marie Guffens and Maine Heynen in 1979. Around 5 hectares. Grape: Chardonnay. Appellations: Pouilly-Fuissé, Mâcon-Pierreclos. Oak-barrel vinification without bâtonnage. White wines of great purity, concentration and complexity. Limited production.
