Breeding
Three years in barrel under a veil of yeast, without topping up
On the eye
Golden yellow robe with subtle depth.
On the nose
Spiced aromatics emerge first, with distinct notes of curry and white pepper. Beneath these, hints of dried fruit and mineral undertones develop with aeration.
In the mouth
Refined yet assertive on the palate. The wine displays considerable freshness and a linear structure, with good acidity and a saline minerality that extends the finish. Dry, precise, and characterful.
M. Francois
Pair with smoked fish such as haddock, or dishes featuring parsley and garlic—escargots, for instance. Its spiced character makes it particularly suited to curry-based preparations. Also excellent with shellfish and aged cheeses from the Jura region.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
