Breeding
A blend of 80% chardonnay and 20% savagnin aged under veil for 2 years
On the eye
Deep golden-amber hue, intense and luminous, with warm amber reflections.
On the nose
A composed bouquet of pristine fruit—mirabelle and stone fruit—mingled with delicate florals and subtle spice. The extended wooden élevage imparts refined complexity without masking the wine's essential purity.
In the mouth
Crisp and focused, with an almost crystalline acidity balanced by soft, melted texture. The finish is long, rich, and mineral-driven, with persistent walnut and hazelnut notes.

Versatile with smoked fish, traditional Jura dishes such as escargots and frogs' legs, creamed poultry, white meats with mushrooms, and spiced preparations. Also excellent with aged cheeses and charcuterie boards. The wine's acidity and mineral character make it a natural bridge between savoury and delicate flavours.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
