In the mouth
The attack is clean and decisive. Flavours of mint, cocoa bean and leather weave through a framework of black fruit. The structure is firm yet supple; the tannins are fine-grained and already beginning to integrate, though they will evolve considerably over time.
On the nose
Fresh plum and cocoa dominate the bouquet, with secondary notes of leather and dark berries emerging as the wine opens. The aromatics are restrained and dignified, never showy.
On the eye
Deep garnet with a lustrous sheen; the rim shows the faintest copper tint characteristic of fine Médoc.
M. Francois
This is a wine of considerable merit with a traditional Médoc profile. It pairs beautifully with a Bordeaux entrecôte or roasted duck. The wine's structure and weight make it an excellent companion to game birds and beef dishes prepared with restraint. Decant one hour before service.

Sitting on the celebrated Grand-Poujeaux plateau in Moulis-en-Médoc, Château Chasse-Spleen covers 107 hectares of some of the most consistent Médoc gravel soils in the appellation. Born from the partition of the Grand-Poujeaux estate in 1822, the château was acquired in 1976 by the Merlaut family, today represented by Céline and Jean-Pierre Villars-Foubet, who have steered it towards Terra Vitis and HVE certification and expanded its footprint significantly with the purchase of neighbouring Château Brillette in 2022.
