In the mouth
Balanced and round, with a generous mid-palate that speaks to the wine's maturity. The finish is long and lingering, with fine tannins that promise further development in the cellar.
On the nose
Ripe dark fruits—blackberry and plum—mingle with white pepper and subtle garrigue. Undertones of forest floor and mineral slate add complexity and depth to the bouquet.
On the eye
Deep black garnet, intense and luminous
Breeding
18 months in oak barrels. Blending of different vineyard parcels before bottling.
A natural companion to beef—particularly paleron—duck, and veal. The wine's structure and spice also make it worthy of game birds and red meats with more assertive flavours. Consider it alongside venison or, for the adventurous, ostrich.
