In the mouth
The palate is delicate and supple, with a silken texture and considerable perfume. The wine shows good length and a refined tannic structure that suggests graceful development in bottle.
On the nose
The bouquet opens with pronounced black pepper and white pepper notes, refreshed by wild dark berries and subtle floral aromatics. The nose is vibrant and inviting without excess.
On the eye
Brilliant, deep ruby with excellent clarity and depth of colour.
This wine pairs beautifully with veal loin in spiced crust, parsnip mousseline, and wild garlic. It would equally complement roasted game birds or herb-crusted lamb. The wine's elegance makes it suitable for refined bistro fare as well as more formal dining.
