  • The wine's backbone derives from Merlot, which lends richness and structure to the blend. The generous fruit character and supple mid-palate are hallmarks of this terroir's finest expression.
  • Cabernet Franc contributes freshness and a subtle spice framework that lifts the wine's complexity. These complementary notes add definition and length to the finish.
  • This cuvée possesses the structure and balance necessary for extended cellaring. The integration of tannins and acidity suggests the wine will develop further nuance and depth over the coming years.

This wine pairs admirably with game dishes of substance and depth. Consider it alongside a braised partridge with lentils, where its tannin structure and aromatic complexity will complement the earthiness and richness of the preparation.

Nicolas françois, propriétaire passionné des halles de quercamps

CHATEAU LA GAFFELIERE

Set on the south-facing slopes of Saint-Émilion (Gironde), Château la Gaffelière farms 22 hectares across limestone plateau, clay-limestone and siliceous soils, producing Saint-Émilion Grand Cru rouge. In the hands of the de Malet Roquefort family since 1705, this is one of the Libournais's most enduring estates: over three centuries of unbroken family ownership, a Merlot and Cabernet Franc blend shaped by diverse soils, and disciplined yields held to 40 hl/ha under HVE certification. At Halles Quercamps, we selected this château for its terroir integrity, consistent winemaking and the frank, characterful expression it brings to the Saint-Émilion appellation.
