In the mouth
The palate is supple and rounded, offering a silken texture reminiscent of vineyard peach. Raspberry provides the dominant flavour, whilst the finish remains fresh and prolonged—a caress rather than a declaration.
On the nose
The bouquet opens with orchard fruit—apple, pear and quince paste—before revealing notes of toasted almond and hazelnut, with a subtle dried apricot character and the faintest cocoa undertone.
On the eye
Brilliant pale gold with fine, vibrant bubbles that form an elegant, persistent bead.
Breeding
Vinification in oak foudres of 60 HL to impart complexity and depth to the cuvée
M. Francois
A cuvée of genuine complexity, where fruit character and depth work in harmony. The wine reveals its layers gradually, building towards a finish that is both fresh and silken, with impressive length. This is champagne of substance and refinement, neither heavy nor austere.

Nicolas françois, propriétaire passionné des halles de quercamps

CHAMPAGNE PHILIPPE GONET

Established at Le Mesnil-sur-Oger since 1910, Champagne Philippe Gonet cultivates 19 hectares on the celebrated deep chalk soils of the Côte des Blancs, one of Champagne's most prestigious Grand Cru villages. Founded in 1830 by Pierre-Charles Gonet, the House is today led by Pierre and Chantal Gonet, who have committed the vineyards to organic conversion since 2021. The chalk here reaches down to 40 metres, riddled with belemnite fossils that lend the wines their distinctive mineral character. At Halles Quercamps, we have selected this House for the precision and depth of its cuvées, the remarkable chalk cellars dating to 1783, and a genuine, unhurried commitment to sustainable viticulture. A true terroir Champagne — mineral, focused, and worth cellaring.
