In the mouth
Fresh and generous on the palate with well-integrated tannins. The mid-palate shows good depth; the finish is clean and persistent, with a pleasant grip that suggests five to eight years' further development.
On the nose
Ripe blackcurrant and cherry with subtle undertones of plum and liquorice. Restrained oak influence adds a whisper of toast and cedar.
On the eye
Deep garnet; dense, well-coloured wine showing good concentration.
Breeding
12 months (50% in barrels of which 66% new oak and 40% of one wine, 50% in stainless steel vats)
This is a wine that rewards the patient collector. Serve it with beef—a steak with pepper sauce would be ideal—or allow it to develop further in bottle. The Fayat family's commitment to quality is unmistakable here: a proper Cru Bourgeois that punches above its classification.
