Breeding
Ageing partly in vat and oak barrels for 10 to 12 months on lees
On the eye
Very pale yellow-green, brilliant and clear. The colour speaks to freshness and careful handling.
On the nose
Delicate and refined. Fresh butter and hazelnut notes soften the stone fruit, with a hint of white flowers. The nose develops with air.
In the mouth
Mineral texture with real richness. The palate is tense but generous, finishing with summer stone fruits and a clean, persistent mineral note that lingers.

I recommend this alongside poached or gently sauced fish—sole, turbot, or even a delicate shellfish preparation. The wine's mineral structure and natural acidity cut through richness without overwhelming. A proper food wine, in the best sense. The 2009 vintage shows good ageing potential; it will develop further complexity over the next five to seven years.

Appellations: Chorey-lès-Beaune, Aloxe-Corton, Corton Grand Cru, Corton-Charlemagne Grand Cru, Ladoix, Pernand-Vergelesses. Around 14 hectares of vines. Traditional Burgundian vinification.
