In the mouth
On the palate, the wine is well-structured with firm tannins and a pronounced oak influence. Notes of dark fruit and gentle spice are evident. With bottle age, the tannins will soften and integrate, allowing greater complexity to emerge.
On the nose
The bouquet opens with dark berry fruit—blackcurrant and blackberry—followed by vanilla and toasted oak notes. The aromatic profile is complex and evolving.
On the eye
Deep ruby to garnet in colour, with an intense, clear appearance.
Breeding
Aged 12 to 15 months on fine lees, 35% in new oak barrels and 50% in one-year-old barrels.
This wine pairs admirably with roasted lamb, beef dishes, and game birds such as guinea fowl. It will also complement aged, firm-textured mountain cheeses. The structure suggests it will develop further over the next five to eight years, making it suitable for those who enjoy cellaring.
