Breeding
50% in 25-year-old large wooden vats and demi-muids, 50% in concrete tanks for 14 months
On the eye
Ruby-garnet robe with amethyst glints, suggesting both ripeness and elegance.
On the nose
Elegant and spice-forward. Sichuan pepper and cinnamon mingle with wild blackberry and subtle verveine. The aromatic profile is refined, never heavy.
In the mouth
Silken texture and remarkable balance. Red fruit aromas sit atop a framework of white pepper, cinnamon bark and ginger. The finish is fresh and crisp, concluding with a distinctive eucalyptus note that cleanses the palate.
M. Francois
Excellent with roasted lamb, particularly preparations featuring aubergine or Mediterranean vegetables. The wine's spice and freshness complement herb-forward dishes and grilled meats admirably. Also rewarding as an aperitif wine.

Le Clos du Caillou is a wine estate in the Châteauneuf-du-Pape appellation (Southern Rhône). Run by Sylvie Vacheron and Bruno Gaspard. Around 53 hectares. Grapes: Grenache, Mourvèdre, Syrah, Cinsault (reds), Roussanne, Clairette, Bourboulenc (whites). Organically farmed. Cuvées: Les Quartz, Les Safres, Reserve. Wines of great depth and complexity.
