L'appellation Chablis désigne des vins blancs produits autour de la ville de Chablis, dans le nord de la Bourgogne, en France. Ces vins sont exclusivement élaborés à partir du cépage Chardonnay. Les Chablis se caractérisent par leur grande minéralité, souvent associée à des notes de pierre à fusil ou de coquille d'huître, ainsi que par des arômes de pomme verte et d'agrumes.
