Il s’étend sur 12 hectares plantés en Gevrey-Chambertin, Marsannay et Fixin. Aujourd’hui dirigé par Christophe Coillot, le domaine pratique une culture raisonnée et exige une qualité parfaite pour ses cuvées.
Marsannay Rouge
Le Marsannay rouge, issu de la Côte de Nuits en Bourgogne, se distingue par son élaboration à partir du Pinot Noir, offrant une palette aromatique riche en fruits rouges comme la framboise et la griotte. Le Domaine Coillot Marsannay Les Boivins 2021 incarne parfaitement cette tradition, avec une cuvée complexe et délicate, cultivée en agriculture raisonnée. Ce vin, par son équilibre et sa gourmandise, se prête admirablement bien aux accompagnements variés, des légumes à la charcuterie, en passant par les volailles et les viandes.
