L'AOC Cabardès, nichée à l'ouest du Languedoc près de Carcassonne, est une appellation unique qui tire sa spécificité de la rencontre entre les influences climatiques méditerranéennes et océaniques. Cette double influence façonne des vins rouges et rosés d'une rare complexité, marqués par un assemblage singulier de cépages atlantiques et méditerranéens. Officiellement reconnue en février 1999, cette appellation couvre une surface de 550 hectares répartis sur 18 communes, produisant des vins qui marient élégamment la puissance aromatique et la fraîcheur.
