Le Saint-Bris est un vin blanc unique de Bourgogne, car il est principalement élaboré à partir du cépage Sauvignon (et Sauvignon gris), contrairement à d'autres blancs bourguignons à base de Chardonnay ou Aligoté. Originaire de la région autour de Saint-Bris-le-Vineux, près d'Auxerre, ce vin offre des notes fraîches et aromatiques d'agrumes, de buis et parfois de fruits exotiques, avec une vivacité en bouche. Il se marie bien avec les fruits de mer, les poissons et les fromages de chèvre.
