"Denis Lafon a perpétué une longue lignée de vignerons en créant son propre domaine en 1967, année où il acquit le Château Du Grand Barrail. En 1971, il complète son domaine par l’acquisition du Château Gardut Haut Cluzeau. Ces deux domaines complètent le Château Du Cavalier, transmis par son père.
Le vignoble du Château du Cavalier est situé sur la commune de CARS. Il s’étend sur 12 hectares et produit des vins souples, fruités et ronds d'une belle couleur rubis."
